4 Summer Salads To Step Up Your Lunch Game

Summer is finally here and one of my favorite things is to eat fresh foods and herbs in season. It also means my husband is back to his busy season at work and I get to make his yummy lunches. I can't help but think he has to get bored with the same old cold-cut sandwich so today I got fancy in the kitchen. I was havin' some fun blasting some Fleetwood Mac and choppin' away. I really do love summer cooking and none of these require the oven!

I went to Aldi because nothing beats their produce prices and left spending about $90 with lots of groceries to spare. Some of these ingredients you may already have on hand! I personally love buying fresh herbs I can plant for these recipes as it really gives them that incredible summer flavor.

Bare with me, as most times I like to just "wing it" when it comes to recipes. ;)

#1. Tomato & Fresh Herb Salad

  • 6 on the vine tomatoes

  • 1 red onion halved and sliced thinly

  • Garlic Minced

  • 1 Cup Fresh Dill

  • 1 Cup Fresh Parsley

  • Salt and Pepper to taste

  • Juice of half of a lemon

  • 2 tsp white wine vinegar

  • 1/3 cup extra virgin olive oil

  • Feta Cheese or Mozz or both ;)

  • Fresh Basil (optional)

  • Balsamic Glaze (optional)

#2. Noodle Free Pasta Salad (low carb)

  • Cauliflower head chopped

  • Broccoli head chopped

  • Red Bell Pepper chopped

  • Green olives halved (or black)

  • Turkey Pepperoni halved

  • Green Onions

  • Parmesan cheese

  • Cubed Cheese

  • pepperoncini (optional)

  • Newmans Own Italian Dressing (to taste)

#3. Cauliflower, Corn, and Cucumber Salad

  • 2 cups cauliflower

  • 1 small cucumber diced

  • 1/2 red pepper, cubed

  • 2-3 green onions

  • 1 can corn, drained

  • 1/3 - 1/2 cup mayonnaise

  • fresh dill to taste

  • salt and pepper, to taste

#4. Asian Bow Tie Salad

  • 1/4 cup olive oil

  • 3 tablespoons seasoned rice vinegar

  • 2 tablespoons brown sugar

  • 1 tablespoon low sodium soy sauce

  • 2 tablespoons toasted sesame seeds

  • 4 cups bow tie pasta

  • 1 cup shredded carrot

  • chopped cilantro (to taste)

  • 1/2 cup thinly sliced green onion

  • 1/2 cup diced red bell pepper

  • 1/2 cup slivered almonds

I just realized now I didn't type out instructions but these recipes are that EASY just toss it all in a bowl, mix, and serve.

You could even add some rotisserie chicken to the above salads for some extra protein. I added some chicken breast to Jacob's lunch for tomorrow. Hope you enjoy these this summer and let me know if you'd like me to share more of our summer salad shenanigans!
